Instructions

  1. Cook the rice: Combine rice and water in a saucepan. Bring to a boil, cover, reduce heat, and cook according to package instructions until tender.
  2. Season the rice: Fluff with a fork, then stir in lime juice, cilantro, and salt. Set aside.
  3. Make the dressing: Whisk together olive oil, lime juice, honey, cumin, chili powder, salt, and pepper in a small bowl.
  4. Warm beans and corn: Heat black beans and corn in a skillet over medium heat for 3–5 minutes. Season lightly with salt and pepper.
  5. Prepare vegetables: Dice avocado, halve cherry tomatoes, dice red onion, and shred lettuce.
