For the Crust and Crumble Topping

  • 1½ cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ¾ cup brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Strawberry Rhubarb Filling

  • 2 cups fresh strawberries, diced
  • 2 cups fresh rhubarb, diced
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract


Instructions

Step 1: Prepare the Oven

Preheat oven to 350°F (175°C).

Line a 9×9-inch baking pan with parchment paper for easy removal.


Step 2: Make the Crumble Mixture

In a large bowl combine:

  • Flour
  • Oats
  • Brown sugar
  • Baking powder
  • Salt

Add melted butter and vanilla extract.

Mix until crumbly.


Step 3: Create the Crust

Reserve about 1½ cups of crumble mixture for topping.

Press the remaining mixture firmly into the bottom of the prepared pan.


Step 4: Prepare the Filling

In a separate bowl combine:

  • Strawberries
  • Rhubarb
  • Sugar
  • Cornstarch
  • Lemon juice
  • Vanilla

Mix until evenly coated.


Step 5: Assemble the Bars

Spread fruit filling evenly over the crust.

Sprinkle reserved crumble mixture over the top.

Cover the fruit completely.


Step 6: Bake

Bake for 40–45 minutes or until:

  • Filling is bubbling
  • Topping is golden brown

Step 7: Cool Completely

Allow bars to cool in the pan for at least 2 hours.

This helps the filling set properly.


Step 8: Slice and Serve

Lift bars from pan using parchment paper.

Cut into squares and serve.

Notes

Chill the bars completely before slicing to help them hold their shape and create clean cuts.

Fresh or frozen strawberries and rhubarb can be used; if using frozen fruit, thaw and drain excess liquid first.

Store leftover crumble bars in an airtight container in the refrigerator for up to 5 days for the best freshness.
