For the Chicken

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 can (20 ounces) pineapple chunks, drained (reserve juice)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, chopped

For the Sauce

  • ¾ cup reserved pineapple juice
  • ½ cup low-sodium soy sauce
  • ⅓ cup brown sugar
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

For Thickening

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Optional Garnishes

  • Sliced green onions
  • Sesame seeds
  • Fresh pineapple slices


Instructions

  1. Lightly coat the inside of the slow cooker with nonstick cooking spray.
  2. Place the chicken breasts or thighs in a single layer in the slow cooker.
  3. Add the pineapple chunks, diced bell peppers, and chopped onion over the chicken.
  4. In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, honey, garlic, ginger, rice vinegar, and sesame oil.
  5. Pour the prepared sauce evenly over the chicken and vegetables.
  6. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
  7. Remove the chicken, shred or chop it into bite-sized pieces, and return it to the slow cooker.
  8. Stir together the cornstarch and cold water, then mix it into the slow cooker. Cover and cook for 15–20 minutes until the sauce thickens.
  9. Stir everything together and serve hot over rice or noodles with your favorite garnishes.
