Ingredients

Scale

For the Pork Chops

  • 4 bone-in pork chops (about 1-inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

For the Garlic Butter

  • 2 tablespoons unsalted butter
  • 3 garlic cloves, smashed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Instructions

  1. Pat pork chops dry and season both sides with salt, black pepper, garlic powder, and paprika. Let rest at room temperature for 10 minutes.
  2. Heat a cast-iron skillet over medium-high heat and add olive oil until hot.
  3. Sear pork chops for 4–5 minutes without moving until golden, then flip and cook another 4 minutes.
  4. Lower the heat slightly, add butter, garlic, rosemary, and thyme, and continuously spoon the melted butter over the chops.
  5. Cook until internal temperature reaches 145°F (63°C), avoiding overcooking for best juiciness.
  6. Remove from heat and rest for 5 minutes before serving to lock in juices.

Notes

Use pork chops that are at least 1 inch thick to help keep them juicy and prevent overcooking.

Cook pork chops to an internal temperature of 145°F (63°C) and let them rest for 5 minutes before serving.

Baste with garlic herb butter during the final minutes of cooking for extra flavor and a beautiful golden finish.
