For the Skillet

  • pounds large shrimp, peeled and deveined
  • 3 medium zucchini, sliced into half-moons
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges, for serving


Instructions

  1. Slice the zucchini and season the shrimp with paprika, Italian seasoning, salt, and pepper.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Cook the shrimp for 1–2 minutes per side until pink and opaque. Remove and set aside.
  4. Add the remaining butter and cook the zucchini for 4–5 minutes until tender-crisp.
  5. Stir in the garlic and cook for 30 seconds until fragrant.
  6. Return the shrimp to the skillet and toss with the zucchini.
  7. Add lemon juice and parsley, then stir to combine.
  8. Serve immediately with lemon wedges, if desired.
