Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Slice the zucchini, tomatoes, and mozzarella into even rounds.
  3. In a small bowl, mix the Italian seasoning, oregano, salt, black pepper, and garlic.
  4. Arrange a layer of zucchini in the baking dish and sprinkle with seasoning.
  5. Add a layer of tomatoes and season lightly.
  6. Top with an even layer of mozzarella slices.
  7. Repeat the layers until all ingredients are used.
  8. Drizzle with olive oil, then top with fresh basil, parsley, and optional Parmesan cheese and breadcrumbs.
  9. Bake uncovered for 30–35 minutes, until the cheese is melted and lightly golden.
  10. Let the casserole rest for 5–10 minutes before serving.
