This easy Italian-inspired dinner is packed with protein, naturally low carb, and ready in under 40 minutes.

Ingredients

Scale

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Caprese Topping

  • 2 large ripe tomatoes, sliced
  • 8 ounces fresh mozzarella cheese, sliced
  • ½ cup fresh basil leaves
  • 3 tablespoons balsamic glaze

Optional Garnishes

  • Extra basil leaves
  • Freshly cracked black pepper
  • Parmesan cheese

Instructions

  1. Pat chicken breasts dry with paper towels. Rub with olive oil and season with Italian seasoning, garlic powder, paprika, salt, and pepper.
  2. Heat a large skillet over medium-high heat.
  3. Add chicken and cook for 6–7 minutes per side, or until golden brown and cooked through to 165°F (74°C).
  4. Top each chicken breast with mozzarella slices.
  5. Cover and cook for 2–3 minutes, until the cheese is melted.
  6. Add tomato slices and fresh basil over the melted cheese.
  7. Drizzle with balsamic glaze and garnish with extra basil, if desired.
  8. Serve immediately.

Notes

  • For the juiciest chicken, cook until it reaches an internal temperature of 165°F (74°C) and let it rest for 5 minutes before serving.
  • Use fresh mozzarella, ripe tomatoes, and basil leaves for the best flavor and texture.
  • Add the balsamic glaze just before serving to keep the basil fresh and vibrant.
