Description

Easy Strawberry Rhubarb Bars are the perfect sweet and tart dessert for spring and summer! Made with juicy strawberries, tangy rhubarb, and a buttery crumb topping, these homemade dessert bars are easy to make and absolutely irresistible.

For the Crust and Crumble Topping

  • 2 cups all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup brown sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

For the Strawberry Rhubarb Filling

  • 2 cups fresh strawberries, diced
  • 2 cups fresh rhubarb, chopped
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, combine the flour, oats, brown sugar, salt, and baking powder. Stir in the melted butter and vanilla extract until the mixture forms coarse crumbs.
  3. Reserve 1½ cups of the crumb mixture for the topping. Firmly press the remaining mixture into the prepared baking dish to create an even crust.
  4. In a separate bowl, toss together the strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract until evenly coated.
  5. Spread the fruit filling evenly over the crust. Sprinkle the reserved crumb mixture over the top.
  6. Step 6: Bake for 45–50 minutes, or until the filling is bubbly and the crumb topping is golden brown.
  7. Allow the bars to cool completely in the pan. For cleaner slices, refrigerate for at least 1 hour before lifting out, cutting into squares, and serving.

Notes

Use fresh or frozen rhubarb and strawberries for this recipe. If using frozen fruit, thaw and drain excess liquid to prevent soggy bars.

Allow the bars to cool completely before slicing for clean, neat squares and the best texture.

Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months for a make-ahead treat.
