  • 6 large flour tortillas
  • 8 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter or oil
  • 1/2 pound breakfast sausage or chorizo
  • 2 cups diced potatoes

  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1 small onion, diced
  • 1 bell pepper, diced

Instructions

  1. Cook the Potatoes : Heat a large skillet over medium heat and add a little oil. Add diced potatoes and season with chili powder, cumin, paprika, salt, and pepper. Cook for about 10–12 minutes until golden brown and tender.
  2. Cook the Sausage : In the same skillet, cook the breakfast sausage or chorizo until fully browned and cooked through. Remove excess grease if necessary.
    Sauté the Vegetables: Add diced onion and bell pepper to the skillet. Cook for 3–4 minutes until softened and fragrant.
  3. Scramble the Eggs: In a bowl, whisk together eggs and milk. Melt butter in a nonstick pan and cook the eggs gently over medium-low heat until soft and fluffy.
  4. Warm the Tortillas: Warm tortillas in a dry skillet or microwave for a few seconds to make them flexible and easier to roll.
  5. Assemble the Burritos: Place potatoes, sausage, eggs, sautéed vegetables, cheese, salsa, and cilantro into the center of each tortilla.
  6. Roll the Burritos: Fold the sides inward and roll tightly into burritos.
  7. Toast the Burritos: Place burritos seam-side down in a skillet and toast for 1–2 minutes per side until golden and slightly crispy.
  8. Serve and Enjoy: Serve warm with salsa, avocado, sour cream, or hot sauce.
