Instructions

- Cook the Sausage : In the same skillet, cook the breakfast sausage or chorizo until fully browned and cooked through. Remove excess grease if necessary.
Sauté the Vegetables: Add diced onion and bell pepper to the skillet. Cook for 3–4 minutes until softened and fragrant. - Scramble the Eggs: In a bowl, whisk together eggs and milk. Melt butter in a nonstick pan and cook the eggs gently over medium-low heat until soft and fluffy.
- Warm the Tortillas: Warm tortillas in a dry skillet or microwave for a few seconds to make them flexible and easier to roll.
- Assemble the Burritos: Place potatoes, sausage, eggs, sautéed vegetables, cheese, salsa, and cilantro into the center of each tortilla.
- Roll the Burritos: Fold the sides inward and roll tightly into burritos.
- Toast the Burritos: Place burritos seam-side down in a skillet and toast for 1–2 minutes per side until golden and slightly crispy.
