  • ½ teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice

For the Kabobs

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 1 red onion, cut into wedges

Garnish

  • Extra grated Parmesan cheese
  • Fresh parsley, chopped


Instructions

  1. Prepare the marinade: In a large bowl, combine olive oil, garlic, Parmesan cheese, Italian seasoning, paprika, salt, black pepper, and lemon juice. Mix well.
  2. Marinate the chicken: Add chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Soak skewers: If using wooden skewers, soak in water for 30 minutes to prevent burning.
  4. Prepare vegetables: Cut bell peppers, zucchini, and onion into uniform pieces for even cooking.
  5. Assemble kabobs: Thread chicken and vegetables alternately onto skewers, leaving small gaps between pieces.
  6. Preheat grill: Heat grill to medium-high and lightly oil the grates.
  7. Grill kabobs: Cook for 12–15 minutes, turning every few minutes for even browning.
  8. Check doneness: Ensure chicken reaches 165°F (74°C) and vegetables are tender with light char marks.
  9. Add garnish: Remove from grill and sprinkle with extra Parmesan cheese and chopped parsley.
