Instructions

  1. In a large bowl, mix shredded chicken, cheddar, Monterey Jack, bell peppers, red onion, and spices until well combined.
  2. Lay tortillas flat and cut a slit from the center to the edge if using the folding method.
  3. Divide the filling evenly and spread onto each tortilla section, leaving a small border.
  4. Fold each tortilla into a secure pocket and press gently to hold its shape.
  5. Heat a skillet over medium heat and add butter or oil.
  6. Cook the quesadilla pockets for 3–4 minutes per side, until golden, crispy, and fully melted.
  7. Let rest for 2 minutes so the filling sets.
  8. Slice if needed and serve warm with your favorite dips.

Notes

For extra crispy quesadillas, lightly brush the tortillas with butter or olive oil before cooking.

Rotisserie chicken works perfectly in this recipe and saves valuable prep time.
