Instructions

  1. Lightly coat the slow cooker insert with nonstick cooking spray.
  2. Add carrots, potatoes, onion, zucchini, and green beans, spreading evenly across the bottom.

  4. Whisk together chicken broth, lemon juice, lemon zest, garlic, olive oil, and Italian seasoning to make the sauce.
  5. Pour the lemon garlic sauce evenly over the chicken and vegetables.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender and fully cooked.
