Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain.
  2. Make the avocado sauce: In a blender or food processor, combine the avocados, garlic, lemon juice, basil, olive oil, Parmesan cheese, salt, and pepper. Blend until smooth and creamy.
  3. Adjust the consistency: Add a few tablespoons of the reserved pasta water as needed until the sauce reaches a silky, pourable consistency.
  4. Prepare the tomatoes: Wash and halve the cherry tomatoes.
  5. Combine the pasta and sauce: Return the warm pasta to the pot or transfer it to a large mixing bowl. Add the avocado sauce and toss until evenly coated.
  6. Add the tomatoes: Gently fold in the cherry tomatoes.
  7. Garnish and serve: Top with fresh basil, extra Parmesan cheese, and red pepper flakes, if desired. Serve immediately for the best flavor and texture.
