Instructions

  1. Heat oil in a large skillet over medium heat. Fry tortilla triangles in batches until golden and crispy, then transfer them to a paper towel-lined plate.

  4. Cook the eggs according to your preference, such as fried, sunny-side up, over easy, or scrambled.
  5. Transfer the chilaquiles to serving plates and top with eggs, queso fresco, avocado, crema, red onion, and fresh cilantro.
  6. Serve immediately with fresh lime wedges and enjoy.

Notes

For the best texture, add the tortilla chips just before serving so they stay slightly crisp and don’t become soggy.
