For the Foil Packets

  • pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh corn kernels (or frozen, thawed)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, sliced
  • 1 zucchini, sliced
  • 1 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cut four large sheets of heavy-duty aluminum foil (about 12 × 18 inches) and lightly grease the center of each sheet.
  2. In a large bowl, toss the chicken with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Add the corn, bell peppers, red onion, and zucchini. Toss to combine.
  4. Pour the barbecue sauce over the mixture and stir until everything is well coated.
  5. Divide the mixture evenly among the foil sheets. Fold and seal the packets tightly, leaving a little space inside for steam.
  6. To grill, cook the packets over medium-high heat for 25–30 minutes, turning once halfway through. To bake, place the packets on a baking sheet and cook at 400°F (200°C) for 25–30 minutes.
  7. Carefully open the packets, check that the chicken has reached 165°F (74°C), then garnish with fresh parsley and desired toppings.
  8. Serve immediately.
